1That Versus Which
In most cases, that & which are used interchangeably; however, these two relative pronouns can technically be different.
Read the sentences below:
Our office, which is recently renovated, is in London.
Our office that is recently renovated is in London.
In the first sentence, there is one office that is in London. As further information, we learn that the office has been recently renovated. In fact, which is recently renovated is a non-restrictive or non-defining clause that can be deleted without changing the meaning of the sentence, because it simply adds extra information to the main sentence: Our office is in London.
In the second sentence, that is recently renovated is a restrictive clause or a defining clause. This sentence means there is one office.  This office has been recently renovated and it is situated in London. It can be inferred there might be other offices in other cities, or other offices in London which have not been renovated.
In short, which is a non-restrictive clause-maker while that is a restrictive one.
